Had a craving this morning so I threw together this clean version of chilaquiles.
•2 corn tortillas (1 yellow carb container)
•Kale,mushrooms,1 small tomato (1 green veggie container)
•2 eggs (1 red protein container)
•small dab of homemade green salsa
•1 tbs of Evoo
•seasoned with Mrs. Dash spicey
Sauté tortillas until a little crispy. Add veggies sauté for a couple minutes then last add eggs.
I personally don't add sauce to my chilaquiles because it's not gluten free. Definitely not traditional but great 👍 Give it a try let me know how you like them.
