TurboFire Chili

TurboFire Chili

Ok, so this has to be the easiest meal to makel!  It is absolutely delicious and you can make it in the crock pot!  I have friends that do not like beans so they omit them and add green peppers, mushrooms or any other veggie you would like!  You can really make it your own!  Just remember to follow the correct portion sizes so you don't over indulge.  It's easy to do with this one.

Ingredients
1 lb. lean ground turkey
½ cup diced tomatoes
8 oz. whole kernel corn, canned
½ onion, diced
2 cloves garlic
8 oz. black beans, canned
8 oz. pinto, chili, or kidney beans canned
1 tbsp tomato paste
1 package Lawry’s chili seasoning
4 oz. low-fat shredded cheddar cheese (optional)

Directions. Brown turkey. Drain and discard any fat. Place all ingredients except cheese into a slow cooker. Cook for 4 hours on low or 2 hours on high. Top with 1 oz cheese if desired.

Almond Coconut Bars

Thank god for honey! It's one of the approved sweet things a paleo person can eat (in moderation), so you should thow that all over your treats. Although I'm pretty confident the men and women of the Paleolithic era did not enjoy these bars after their workout, you can!

Prep time: 10 minutes Cook time: 20 minutes
Makes: 8 bars

Ingredients
1 cup almonds, chopped or slivered
1/2 cup coconut flakes
1/4 cup almond butter
1/4 cup organic honey

1. Preheat oven to 400F degrees.

2. In a medium bowl, combine the ingredients and mix until completely moistened. Pour the mixture into a wax paper-lined 6 -by-6 inch square pan. Using another piece of wax paper, flatten the mixture to a thickness of 1/2 inch. Remove the top layer of wax paper when mixture is evenly distributed in pan.

3. Bake for 20 minutes. Remove from oven and allow to cool for at least 20 minutes before slicing into 8 bars.
